Mash Potatoes & Cauliflower
Two for one special
Time: 45min
Ingredients:
Cauliflower Portion:
1 Large Cauliflower head
2 TBSN butter
Salt/Pepper
Potatoes Portion:
8 Red Potatoes
1/2 cup milk
1/2 cup butter
Sour Cream
Salt/Pepper to taste
Step 3: Potato dice!
Cut potatoes into chunks (around 1 or 2inch thick sides). Place in large pot of warm water, set to high, boil until easily mashed by fork.
Makes: 10 cups
Step 5: Drain, Mix and Serve!
Carefully drain potatoes and place tators back in pot. Mash the tators mostly, leaving some lumps for texture as desired. Stir in the cauliflower from Step4. Slowly add each of butter and milk until desired texture reached (add too much and will be too thin/soupy). Spoonful or two of Sour Cream (optional) dd salt/pepper to taste. Serve!
Pairs with: dinner!
Step 2: The Great Potato Peel
Peel about 2/3rds of the red potatoes, leaving skin on last 1/3 for added texture/taste.
Step 1: Prep Cauliflower
Cut cauliflower florets (no thicker stalks) into small tiny bite size bits. Stir with mostly melted 2 TBSP of butter. Place in casserole pan, sprinkle with pinch of salt/pepper, place into 400deg oven for 30min or turning golden.
Step 4: Cauliflower Power
Once cauliflower has been softened by baking in the oven, mash the cauliflower which will resemble riced cauliflower (chopped rice look/texture). Set aside for Step5.
