Fried Rice
Home made is possible
Time: 45min
Ingredients:
4 cups of *day old rice!*
2 TBSP Grape Seed Oil**
1/3 of a yellow onion (diced)
1 tsp fresh Ginger*** (minced)
3 garlic cloves (diced)
1 bunch of Asparagus
2 eggs
Handful of Spinach
1 TBSP Soy Sauce
Salt and Pepper to taste
Step 2: Turn up the Heat
Add the 2 TBSP of oil to a Wok and turn up med-Hi to Hi (7 setting on a 1-10 electric stove). Once hot, add the diced onion and cook for 2min. Add the ginger and garlic and cook another 30 seconds to 1 minute. Add the diced Asparagus and cook for about 1-min.
Makes: 10 cups
Step 4: Eggs
Move the rice to the edges now and add 2 beaten eggs to the middle. Stir eggs about every 30 seconds to break into clumps. When about 90% cooked push rice / veggies over the eggs. Add the Spinach and Soy Sauce. Stir everything well. Salt and Pepper to taste and remove from heat immediately thereafter. Serve hot.
Step 1: Prep
Things move fast at first. Wash the Asparagus (trust me - it may be gritty if you have dirt in there), lay out over paper towels to dry (you'll be adding to oil which doesn't mix with water!). Once dry cut into 1/2" or so sections from the spear tip down about 1/3 of the way, discarding the rest. Dice about 1/3 of a yellow onion. Mince the Ginger (fresh Ginger is strong, you'll want the pieces tiny). Dice the Garlic (or use the pre-diced in a jar kind (what!?).
***Note: Fresh ginger is MUCH more stronger than ginger powder.
Tool: Wok
*Note: Use day old rice - the texture change makes a big difference. Trying to scale up this recipe for a larger serving size isn't recommended - instead cook separate batches - the ingredients work better with just the right amount.
**Note: Can use other oils buy Grape Seed oil does impart somewhat of a taste onto the food. The main reason otherwise is it's a high heat oil. Substitutions can also be Avocado Oil or Olive Oil.
Step 3: Rice Time
Move the veggies to the sides and add the day old rice into the middle, pressing down on it so evenly cooking down there. Cover for 45 seconds, then flip the rice over, repeating this until rice starts to brown.
