Tortellini Soup
Simple Tortellini & Sausage Soup
Time: 1hr
Ingredients:
- 1 medium yellow onion 
- 1 TBSP Olive Oil 
- 1 pack of sausage 
- 3 cloves minced garlic 
- 1/2 tsp Red Pepper Flakes 
- 1/8 tsp ground pepper 
- 1/8 tsp Kosher salt 
- 1 can diced tomatoes 
- 1 box Veggie broth (4 cups) 
- 1 box Chicken broth (4 cups) 
- 20oz of fav Tortellini 
- 1 can Cannellini Beans 
- 3 cups Spinach 
Step 1: Dice Onion
Add 1 TBSP Olive Oil to large pan. Once heated add diced onion. Cook for a few minutes to soften/brown but move to step 2 before burns or sticks.
Makes: About 12 cups
Step 2: Sausage Time!
Cut the round Sausage into bite size rounds, halves, and quarters to give it a good mix. (Remember you'll want to enjoy the sausage and tortellini's on the same spoon later!). Add to the cooking diced onions, stirring frequently to prevent any sticking / burning on Med-High heat for a few minutes.
Pairs with: Buttered oven toasted bread
Step 3: Flavor Boost
Add the minced garlic, cook for about 1 min more. Then add the red pepper flakes, salt, pepper, tomatoes and both broth boxes. Stir together and bring to a boil.
Tip: Salt levels will depend on Tortellini's and broth amounts. Adjust as needed.
Step 4: Simmer to Soak
Add tortellini and reduce, uncovered, to low/med setting. Simmer for 20min, stirring about every 4min.
Step 5: Final touches
Add beans and roughly chopped / hand ripped spinach. Stir to combine and wilt the spinach. Then serve.
