Soy Honey Shrimp
Simple yet sweet.
Time: 20min
Makes: 4 servings.
Ingredients:
1-lb. peeled & de-veined shrimp (unfrozen)
1/3 Cup Honey
1/8 to 1/4 Cup Soy Sauce
1 tsp minced fresh ginger* (*Fresh ginger is MUCH stronger than ginger powder!)
1 TBSP minced garlic
Drizzle of Olive Oil
1 package of Couscous or Rice
Step 1: Shrimp Prep!
Make sure tails removed on shrimp and de-veined (the outside tiny black line, tiny slit there if removed...it's just the food off ocean floor they've been eating, better to avoid).
Step 2: Get Saucy.
Mix the Honey, Soy Sauce, minced ginger & garlic. Split into 2 even portions.
Step 3: Marinate!
Pour half the sauce mixture over the shrimp and marinate in for 10-20min.
Step 4: Prepare the bed.
Prepare the Couscous or rice per package instructions.
Step 5: Shrimp Fire
Drizzle olive oil into a pan on Med-Hi heat. Once heated, place shrimp into pan (one layer), discarding rest of marinate (discard since raw shrimp). Tip: If pan too hot oil may react to marinate when first place. Cook for 2-3 min, then turn over. Shrimp turns more white/pink when cooked (short cooking time). Cook for another 2-3min after flipping. Then add other half of marinate, cooking for another 1-2min.
Pairs with: Bag of microwaved frozen corn.
Tip: Publix carries thawed shrimp, occasionally on sale for less than $8/lb.
Step 6: Serve.
Remove from heat and serve immedietly on bed of couscous or rice.
