Roast
Complete with potatoes and carrots!
Time: 8.5hrs (30min prep, 8hr cook)
Makes: 5-8 servings (Depending)
Step 1: Sear the Meat
Use Saute setting on an Insta-Pot, heating 1 TBSP Olive Oil. Season the Roast with salt & pepper all sides. Place into Insta-Pot (no lid) to quickly sear all sides - just a few minutes each side should do. Turn off Insta-Pot so doesn't burn bits left / oil.
Step 2: Transfer
After searing the meat place into Crock Pot (I like to set on a metal wire rack that keeps it about 1/4" off bottom, but optional).
Step 3: Soften and Mix
Using the remaining oil in Insta-Pot (add more if needed, carefully as hot), add diced onion and cook until a little clear/browned, stirring regularly to prevent burning / sticking. Add the garlic and cooking an additional 30 seconds to 1 min. Turn off heat. Add in the beef broth, Worcestershire sauce, Thyme, Rosemary and stir, including the bottom / sides of pan to capture any stuck on flavor (you'll want that, wooden spoon works well).
Step 4: Layered
Cut potatoes into bite size chunks. Sprinkle the potatoes and carrots (alternating handfuls) back and forth until filled to top of crock pot. Then carefully (pan may be hot!) pour the broth from the Insta-Pot over the top of the crock pot mix. Sprinkle with the Parsley or Italian Seasoning. Place lid on Crock Pot and set on Low for about 8hrs. Don't stir or lift lid - just set it and forget it.

2.5+lb. Chuck Roast
1+TBSP Olive Oil
Dashes of Salt
Dashes of Black Pepper
Small Yellow Onion
5 Garlic cloves
2 Cups Beef Broth
2 tsp Worcestershire Sauce
1 TBSP Thyme
2 fresh sprigs Rosemary
1 tsp Parsley or Italian Seasoning
3 lbs. yellow potatoes
1 lb. thick baby carrots
Pan: Insta-Pot for sear / softening; Crock Pot for main.
Tip: When go to store leftovers, you have two options because grease / fat will settle to the top and congeal - Either don't include the broth in storing -or- make sure to cover meat / veggies with a good half inch or more of broth above meat/veggies so that when congeals can more easily remove it before heating up.
