Chili - Veggie
Flavorful spice flavored (but not hot) veggie chili.
Time: 6hr
Makes: 8-10 servings
Ingredients:
2 TBSP Olive Oil
1 small/med. yellow onion
2 large carrots
2 large celery stalks
2 sweet potatoes
2 garlic cloves
2 tsp Chili powder
2 tsp Paprika
2 tsp Cumin
1 tsp Oregano
1.5 cups Veggie Broth (or use water)
1 red bell pepper
3 cans diced tomatoes
1 can black beans
1 can red kidney beans
Optional:
1/2 to 3/4 tsp salt (not needed, but does bring out a little more flavor)
Tip: Top it off with a little shredded cheese & dab of sour cream. Serve on a bed of or with a side of rice.
Step1: Soften
In a large pan, heat olive oil, add the diced onion, chopped carrots and sliced celery. Cook, stirring frequently about 10min.
Step3: Pot it like its hot
Pour the pan full of veggies into the Crock Pot. Pour the veggie broth into the pan and swirl to de-glaze, capturing all the spices left in pan, and pour into Crock Pot. Next add the diced red pepper and remaining 2 cans of tomatoes to Crock Pot, stir well, cover. Set on Low for 4 hours, then start step 4.

Step2: Seasoning
After softening, now add all the spices (Chili powder, Paprika, Cumin and Oregano), the minced garlic. Cook, stirring frequently, for about 1min. Then add in chopped sweet potatoes and 1 can of tomatoes. Continue to cook for about 1 to 2 more min.
Step4: Turn up the heat
After 4 hours on Low, now add the 2 cans of beans, turn Crock Pot to High and let cook for another 2 hours or until sweet potatoes desired texture.
