BROCCOLI CHEDDAR SOUP

Time: 1hr
Makes: 8 servings
Ingredients:
4 TBSP butter
1 small white onion
3 garlic cloves
4 TBSP flour
2 large broccoli heads (or 1 bag)
3 large carrots
1 box vegetable stock
1.5 tsp Kosher salt
3/4 tsp pepper
1/2 tsp Paprika
2 cups Half & Half (or heavy cream)
16oz shredded cheddar cheese
Step1: Soften the veggie's (See note)
Place small bunches of broccoli florets and thinly sliced carrot strips into bamboo steamer, steam for 15min, rest for 5min.
(Note: if no bamboo steamer, just add broccoli and carrots at step 3, bring to a boil then reduce to medium-low for 15min+ until soft)
Step3: Make the base
Whisk in the flour which should just soak up the liquids. Then add vegetable broth, seasoning, broccoli and carrots. Bring to a boil then low heat and simmer about 10min.
Step2: Start cooking
Add butter to large pot, followed by diced onion, cooking until tender / change color. Then add garlic and continue cooking for 1min. Stir occasionally.
Step4: Make the gooey goodness
Add Half & Half and shredded cheese. Simmer on Low until heated back up to desired eating temperature. Season with salt/pepper as needed. Serve & enjoy!
