Turkey Smoked Sausage Soup

Breakfast sausage in a soup!

Makes: 4 servings

Ingredients:

  • 1 box veggie stock

  • 2/3 of small white onion

  • 2 large carrots

  • 4oz Rutabaga

  • 1 Leak (white part only)

  • 7oz Turkey Smoked Sausage

  • 1 TBSP minced garlic

  • 1/4 cup fresh chopped Parsley

  • 2 tsp fresh Thyme

  • 4 fresh finely chopped Sage leaves

  • 1/4 tsp pepper

  • 1/4 tsp salt (or less depending on stock and smoked sausage)

Tip: Smoked sausage may come in 14oz packs, so double recipe and enjoy!

Step1: Pressure Cook

Into Pressure Cooker add the stock, diced onion, sliced carrots, chopped rutabaga, diced leak, smoked sausage, garlic, salt & pepper. Pressure cook for 10min. Naturally release pressure for 15min, then release remaining pressure (per manufacturer).

Step2: Fresh Seasoning

Now add the Parsley, Thyme & Sage. Saute for 10min, stirring often to avoid burning on bottom. Serve!
