Turkey Meatball Sub

Combine homemade meatballs and marinara

Time: 45+min

Makes: 6-8 subs (depending on how much filling for each)

Ingredients:

Meatballs:

  • 1 lb. Ground Turkey

  • 1 Egg

  • 1/4 cup Italian bread crumbs

  • 1/4 cup Parm cheese

  • 4 TBSN fresh diced Parsley

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1/4 tsp black pepper

  • 3/4 tsp Kosher salt

Sauce:

  • 2 TBSP olive oil

  • 1 TBSP minced garlic

  • 1/2 tsp dried oregano

  • 1/2 tsp red pepper flakes

  • 2 TBSP fresh (or dried) parsley

  • 28oz. can crushed tomatoes

  • 14oz. can petite diced tomatoes

  • Salt/Pepper to taste

Sub / Cheese:

  • Italian blend cheese or use your own blend of Parm and Mozerella cheeses, enough to sprinkle on top of each as desired.

  • Sub rolls from your favorite store.

Step 1: Get the meatballs cooking!

Preheat oven 375-degF, combine all the meatball ingredients, place spoonful ball-ish like shapes onto foil lined cooking spray baking sheet, bake for 22min total, turning over halfway through.

Step 2: Simmer that sauce.

Once the meatballs are in the oven, start the sauce!

Heat the olive oil in a pan med / med-hi. Once hot saute garlic for about 1-min, but just before browns add the oregano, red pepper flakes and parsley, stir for a few seconds. Then add the 2 cans of tomatoes, reduce heat and simmer for 10-min or so. Salt/pepper to taste (remember the meatballs and cheese topping will have their own salt content). Tip: If you don't like the tomatoes chunks, run it through a food processor.

Step 3: Create your sub - but DON'T eat it yet!

Meatballs and sauce should be ready about same time. Add a tiny bit of sauce to lower opening in sub (I know, I know...you NEVER create soggy bread, but we want to make sure the marinara sauce isn't stuck at top only for taste is why!). Add 2.5 to 3 meatballs (or as desired depending on their size) to sub (I like to break into tiny pieces). Cover on top and some down sides of meatballs. Sprinkle generously with your cheese blend.

Step 4: Melt the cheese!

Place in middle rack on broil. Just enough to melt the cheese but not make your sub roll crusty - you want the bread warm but not hard shell.

Step 5: Now enjoy!

Remove from oven and enjoy immediately!
