Time: 1-hr

Makes: classic casserole size

Step 1: Oven Prep!

Set oven rack in middle and preheat at 350-degF

Step 2: Meat

Cook the meat thoroughly, add just a dash of salt and pepper. While cooking, microwave the corn and peas per their instructions.

Step 3: Mix

Place the meat, corn and peas into casserole dish, mix well. Sprinkle cheddar cheese on top evenly.

Step 4: Tator - Top

For mashed potatoes, cut potatoes into chunks, boil until very soft. Drain and return to pot. Add the butter, Sour Cream and milk (slowly add the milk and adjust amount used as necessary as to not make soupy. Mash the tators until desired consistency. Salt and Pepper to taste. Evenly place mashed potatoes across top of casserole. Place in oven for about 10 to 15min (long enough to melt cheese in there).

*If using Frozen Tator-Tots in lieu of mashed potatoes, place the tots over the cheese in a single to double layer. Place in oven at the 350 temp, and cook until tots have warmed to desired temp - this could be 20 to 30+min or more.

Ingredients:

  • 1-2 lb. Ground beef

  • Dash of Salt

  • Dash of Black Pepper

  • 1 frozen bag corn

  • 1 frozen bag peas

  • 2 Cups shredded cheddar cheese

    *Mashed Potatoes:

  • About 8 Potatoes (Yukon/Russet)

  • 1/2 Cup Milk

  • 1/2 Cup Butter

  • 1/4 Cup Sour Cream or Heavy Cream

*Optional: You can also replace the mashed tators with frozen tator-tots! Just cook at the same lower 350 temp to prevent glass casserole dish from breaking in oven and cook much longer until tator tots are warm. Food thermometer works well here...just poke the tots, not down to the warm meat and cheese below, until temp reading matched what tots should be heated to, which is typically labeled on the bag.
