Broiled Tilapia

Quick, Easy, Healthy-ish

Time: 15-20min

Makes: The number of fish on hand.

Ingredients:

  • Talapia (typically 1 full piece per person, cut into 2 halves)

  • Mayo (1 spoonful, but not heaping, per fish half)

  • Lemon Juice (just enough to thin mayo but not make it watery)

  • Parsley (One shake of dried parsley per fish half)

  • Old Bay Seasoning (0.75 to 1 shake per fish half)

  • Parmesan Cheese (Small pinch per fish half)

  • Salt/Pepper for lite seasoning each side

  • Italian Bread Crumbs (just enough to mostly cover mayo mixture on one side only per fish half)

Step 1: Oven Prep!

Set oven rack to top position, turn on Broil.

Step 2: Round one.

Cover baking tray with foil, spray with non-stick. Cut the Tilapia into two pieces (Can easily see where to cut down middle with this fish). Place on tray about 1 inch apart, sprinkle with lite layer salt pepper, flip and repeat seasoning. Place in oven, top rack on Broil for 4min-30seconds.

Step 3: Round two - Flip!

Remove from oven, turn fish over, replace in oven (top rack) for another 4min-30seconds.

Step 4: Topping Prep.

While fish continues to broil, make the final stage topping. In a bowl mix the Mayo, Lemon Juice, Parsley, Old Bay Seasoning and Parmesan Cheese, amounts per ingredients list for each number of fish halves.

Step 5: Final Stage.

Remove fish from oven. Spoon topping mixture over all exposed areas of top and sides of fish. Sprinkle the Italian Bread Crumbs which will stick to topping, being careful not to lay on too thick and not to spill in excess onto baking tray as those will being to burn. Place back in oven, top rack on Broil for 4min to 4min-30seconds. Serve!
